LADOO


Ingredients:

  • Besan Flour(Kadala Mavu) - 1 cup(measure it tightly)
  • Baking Soda - 1 pinch(you can avoid baking soda if you do not like)
  • Sugar - 1 1/2 cup
  • Water - 3/4 cup(for making the sugar syrup)
  • Cardamom Powder - 1/2 tsp
  • Cashew Nut - As per your taste
  • Kismiss - As per your taste
  • Cloves - 5 nos
  • Ghee - 1 tbsp
  • Laddle/or small plate with holes
  • Oil for frying
Preparation:
  • Mix Besan flour ,baking soda and small pinch of salt in a vessel.Add enough water(it might be 1/2 cup and 2-3 tbsp of water) so that it will form a flowing batter.(should not be too flowy. Should be loose than the the dosa batter).Mix the batter thoroughly so that no lumps are there.
  • Note:At this stage you can add yellow color if required.The besan flour have natural yellow color so it is not necessary to add the yellow color.
  • Keep the batter aside and we will make the sugar syrup now.
  • Take a pan and mix 1 cup of sugar and 3/4 cup of water.Heat the mix till you get a thread like consistency.
  • To see whether the consistency is correct take a bowl of water add 2-3 drops of sugar syrup into it, the syrup will become small balls instead of dissolving into the water.
  • Switch off the flame and add cardamom,cashew nut,kismiss and cloves into the sugar syrup and mix it well.
  • Keep the sugar syrup pan on hot water so that the syrup will remain hot till we prepare the boondi.
  • Take a pan for frying the pan, Heat oil in it.
  • Add 2-3 drops of batter on to the heated oil.The batter should fry immediately and come on top of the oil that is the required temperature of oil.If the consistency of batter is correct it will form a round boondi else will be thick and won't be round.If you get like that add little water into the batter and mix it. 
  • Take the ladle with the hole and hold it on top of the heated oil and pour the batter through it.So that the batter will fall into the oil as drop by drop.
  • Take the boondi out of oil within 20-25 sec. Prepare boondi with the remaining batter in the same manner.
  • Make sure our sugar syrup is still hot,else you can just heat the syrup.
  • Add the sugar syrup into the prepared boondi little by little.Mix it well with the boondi.
  • Add ghee into it and mix it thoroughly.
  • When it is hot itself make small rounds (ladoo shape).While making balls just squeeze and press tight to shape the ladoos with your hands.
  • Note:When you make ladoo it will be moist at the beginning After sometime you will get the moist free ladoo.

NANKHATAI
Ingredients:

  • Maida - 1 Cup
  • Besan/Gram Flour-  1/2 cup
  • Suji/Semolina - 2.5 tbsp
  • Powder Sugar - 1/2 cup
  • Salt- 1 pinch
  • Cardamom Powder - 1 pinch
  • Ghee/Slightly melted butter - 1/2cup
  • Pistachios/almonds
Preparation:
  • Take a bowl, add maida, besan, suji, powder sugar, salt and cardamom powder and mix it well.
  • Pour in ghee and form into a dough.(if you require more ghee to form dough you are free to add.The consistency need not become like chapathi dough, you should be able to make balls from it without breaking that is it.
  • Make small balls out of dough and shape into round peda like shape.Top with pistachio/almonds.
  • Take baking tray and keep butter paper on it.Keep the nankhatai for baking on it.
  • Preheat the oven.
  • Keep the baking tray inside preheated oven and bake it for 18 min at 160C(both rods on position)
  • Check it whether nankhatai is cooked by inserting a toothpick into it and it should come out clearly.
  • Let the nankhatai get cooled completely and serve it.
  • You can also bake it without oven> take idli cooker,preheat the idli cooker with 1.2 cup of salt,once hot,place the nankhatai on the idli plates and place the idli plates inside the idli cooker and bake it for 18 mins.Keep in low flame.

EASY RAVA LADOO



   INGREDIENTS:
  • Rava/Sooji - 1 Cup
  • Sugar - 3/4 cup
  • Grated coconut - 1/4 cup
  • Ghee -  2 tbsp
  • Cashewnuts - 15 nos ( can add more as per your taste)
  • Raisins - 10 nos (can add more as per your taste)
  • Cardomom powder - 1/2 tsp
  • Warm milk - 3 tbsp (or as needed to make laddoo)
PREPARATION:
  • Take a kadai and heat it.Add ghee into it.
  • When ghee is hot add cashew and raisins. Saute till raisins becomes like ball.
  • Add grated coconut and saute for a minute.Do it in low flame.
  • Add Rava/Sooji and roast it until you feel the raw smell goes. Saute for 5 minutes.
  • Add sugar to it and mix until the sugar is well combined with the rava.
  • Add Cardomom powder to it .Mix it well and switch off the flame.
  • Add warm milk and mix it well.If you are unable to make as ladoo add some more warm milk.
  • Take some portion of the hot mixture and shape it into ladoo.

VEGETABLE STUFFED CHEESE OMLET


Ingredients:
  • Olive Oil/Veg Oil - 4 small spoon
  • Onion - 1/2 cup(Finely Chopped)
  • Capsicum - 3tsp (Finely Chopped)
  • Mushroom - 1/4 cup(chopped)
  • Salt,Black Pepper - As needed
  • Italian Seasoning - As needed
  • Tomato - 3tsp(sliced )
  • Egg - 3
  • Milk - 3 tsp
  • Cheese - 2 slices 
Preparation:
  • Take oil in a pan and saute onion.
  • Add capsicum and mushroom and saute for 2-3 mins.
  • Add salt,pepper and italian seasoning and mix it.
  • Add tomato and mix everything .Keep this filling aside.
  • Beat egg in a bowl along with milk,salt and black pepper.
  • Take a pan and heat it.Add olive oil and pour the beated egg.Close the pan with a lid.
  • When the egg is cooked around 90%.Put thefilling on one side of the omlet and keep the cheese on it.Fold the omlet
  • When cheese is melted take omlet from the pan and serve it hot.

Ingredients:
  • Bread - 6 nos
  • Olive/Veg Oil - 2tsp
  • Cheese Slice - 3 ns
  • Tomato - 2 or 3 nos
  • Capsicum - As required(Chopped)
  • Carrot - As required (Slice thinly)
  • Salt, Black Pepper, Italian Seasoning - As needed
If you require more /less vegetable you can prepare as your wish :)

Preparation:
  • Take bread and cut all its edges.Apply oil on one side of the bread.
  • Heat a pan and toast it gently.
  • Take 1 slice of half toasted bread and keep 1 slice of cheese on it.
  • Keep tomato,capsicum,carrot, salt, pepper and Italian seasoning on it.
  • Keep another slice of bread on top of it.Keep the sandwich on the pan and press it.
  • When one side become golden brown toast the other side too.
  • When 2 sides become golden brown and cheese starts melting switch off the flame and have it hot.

CARROT COCONUT BALL


Ingredients:

  • Carrot - 2 big
  • Ghee - 2tsp
  • Coconut grated - 1 cup
  • Cardamom Powder - 1 pinch
  • Condensed Milk - 1/2 tin
  • Cashew -As Required
Preparation:
  • Grate the coconut.
  • Take a pan and put ghee.When ghee becomes hot add grate carrot and coconut.Saute till the raw smell and taste of carrot goes (15-20)mins
  • Add condensed milk and mix it well.
  • Saute for 5-6 mins.The mix should be good to make it like ball.
  • Add cardamom and cashew.Mix it well.
  • Switch off the fame and make the mix into small balls.

Ingredients:
  • Egg - 3nos
  • Maida - 7 tbsp
  • Sugar - 5 tbsp
  • Turmeric Powder - 1 pinch
  • Cardamom Powder - 1/2 tbsp
  • Baking Soda - 2 pinch
  • Cashew - 1 1/2 tbsp
  • Kismiss - 1/2 tbsp
  • Ghee- 1 tbsp
Preparation:
  • Take a bowl add egg, sugar,baking soda and cardamom powder.Beat it firmly.
  • Add maida in small quantity into the mixture and stir it.The batter should not be too thick.We should be able to pour the batter into the cooker.
  • Add pinch of turmeric powder to get the yellow color.Mix the batter properly.
  • Take a pan and roast cashew and kismiss in ghee/butter.
  • Take a pressure cooker and heat it.Once the cooker is hot keep in low flame.Keep the cooker in smallest burner.
  • Apply ghee at the bottom of the cooker and pour the batter into it.
  • Close the lid and without putting the weight cook for 10 mins.
  • After 10 mins open the lid and put roasted cashew and kismiss on top of it.
  • Close the lid and cook for another 20-25 mins without keeping the weight.
  • See whether it is cooked using a toothpick.
  • If its cooked switch off the flame and take the Mutta kums out of the pressure cooker.

Ingredients:
  • Wheat Flour - 2 cups
  • Small banana - 3 nos
  • Baking Soda - 2 pinch
  • Jaggery syrup - 1 1/2 cup (Take jaggery as much sweetness as required and melt it in 1 1/2 cup of water)
  • Cardamom Powder - 1/2 tbsp
  • Cumin Powder - 1/4 tsp
Preparation:
  • Mix the jaggrey syrup and banana in a blender and make into a smooth paste.
  • Take a bowl and add wheat flour,cardamom powder,cumin powder,a pinch of salt,2 pinch of baking soda and jaggery banana paste.Mix the batter.
  • The batter should not be too thick or too watery.We should be able to hold the batter.(you can add water if you feel water is less)
  • Keep aside the batter to rise for about 3-4 hrs.
  • Take a pan and heat enough oil in it such that the bonda will be fully dipped inside the oil.Keep in medium flame.
  • Make small balls from the batter and put in the oil .Fry till it becomes dark golden brown.

Ingredients:
  • Banana (Ethakai) - 3 nos (Ripened)
  • Maida - 2 cups
  • Rice flour - 2tbsp (for making it crispy)
  • Turmeric Powder - 1 pinch (for the yellowish color)
  • Cumin seeds - 2 pinch(optional)
  • Sugar - 2 tbsp
  • Salt - As required
  • Water
  • Oil
Preparation:
  • Take a bowl and mix maida,rice flour,turmeric powder,cumin seeds, sugar,salt and required water.
  • Mix the batter such that its thick so it will give nice coating on banana.
  • Cut the banana length wise.The pieces should not be too thick.
  • Take a kadai and heat oil.Dip banana in the batter and put in the hot oil.
  • Fry both side of the banana and filter from oil.Our Pazham pori is ready :)

FRENCH TOAST

Ingredients:
  • White Bread - 6nos
  • Egg - 1
  • Milk - 1 cup
  • Butter/Ghee - As required
  • Honey - 3tbsp(you can use sugar too)
Preparation:
  • Take a bowl and beat milk,egg,honey.A thick foam should be formed.
  • Take a pan and heat ghee on it.
  • Take bread and dip in the mixture 
  • Roast both sides of the bread in the pan.
  • French toast is ready :)

  • Bajji Mulaku- 4nos
  • Gram Flour - 3/4 cup
  • Red chilli powder - 1/4 tsp
  • Turmeric powder - 1 pinch
  • Pepper powder - 1 pinch
  • Asafoetida powder - 1 pinch
  • Salt - As required
  • Water - 1/2 cup
  • Oil
Preparation:
  • Take a bowl and add gram flour,red chilli,turmeric,pepper and asafoetida powder.Mix everything.
  • Add water and make into a thick batter.Add required salt.
  • Slit the bajji chilli in the middle and remove the seeds from inside.
  • Take a kadai and heat the oil.
  • Dip the bajji chilli in the batter and dry it in the oil.
I didn't make my batter thick that is why there in gap in my chilli bajji ;)

CHIRATTAKILI


Ingredients:
  • Banana (Ethakai) - 1 Large (not so ripe)
  • Rice flour - 1cup
  • Sugar - As needed
  • Salt-1 pinch
  • Coconut grated - 1/2 cup
  • Cardamom powder - 3-4 pinch
  • Water
Preparation:
  • Cut banana vertically and thencut into small pieces.
  • In a bowl add rice flour,coconut,sugar,salt,cardamom powder and the banana.Mix it well using water.
  • The batter should not be too thick or too watery.Let it be in dosa batter consistency.
  • Take a pan for steaming.We have to steam the batter for around 30 mins.
  • Check whether it is cooked inside using a toothpick.
  • You can also microwave it ,Keep it for around 15-20 mins.

KOZHUKATTA


Ingredients:
  • Roasted Rice flour - 1 cup
  • Coconut - 1/2 coconut grated
  • Jaggery - As per the taste
  • Cardamom powder - 1 tsp
  • Salt - As required
  • Ghee - 1 tsp
  • Hot Water
Preparation:
  • Heat the water and add little ghee so that our flour will be smooth.
  • Add required salt in the hot water.
  • Take a bowl with rice flour and add water little by little and stir it.The readiness of the flour is like chapathi dough.Do that with your hand so it will be soft.
  • Keep aside the dough covered with tissue paper for around 10mins.
  • Grate jaggery. Mix coconut, jaggery, cardamom powder. This is our filling
  • Make small balls of the dough and make it little flatter to keep our filling inside it.
  • Keep the fillings inside the dough and cover it and make as ball.
  • We have to steam it for around 20-25 mins.

Ingredients:
  • Kadala Parippu (Bengal Dal) - 2 Cups
  • Small Onion - 1 Cup Sliced (The more you add the more taste it will be :) 
  • Green chilli - 3- 4 nos( roundly chopped)
  • Dry Chilli - 3-4
  • Ginger - 2 tbsp (crushed)
  • Salt- As required
  • Curry leaves
  • Oil
Preparation:
  • Grind the dal in Mixi without water.Do not grind completly.It should be around 60-70% then only our vada will have little dal to bite.
  • Take a bowl and mix grinded dal, small onion,Curry leaves, green chilli, dry chilli, ginger and required salt.
  • Mix everything and keep it aside for about 2hrs.
  • Heat oil in a pan.Make small round or oval shaped vada from the mixture and fry it in the oil.
  • This is the simplest recipe you can make :)

Ingredients:
  • Apple - 2nos (peel it and remove the seeds, then cut into small cubes), When u cut the apple put little lemon juice so that it wont become dark.
  • Coconut - 1 cup grated
  • Sugar - 1 cup
  • Nuts - As per your taste
Preparation:
  • Take a kadai and heat it, Add Coconut and sugar into it and mix well.
  • When the sugar starts melting add 1 tbsp of water and stir it.
  • When it becomes light brown add our chopped apple and mix everything.
  • Cook for 5- 10 mins so that water from apple will come out.And switch off the flame
  • Take a tray and apply ghee on it.Transfer the burfi from kadai to our tray,Make the top portion flat and you can sprinkle the pista/almond/cashew on top of it.
  • Now we have to set it.So after the burfi is cooled keep it in fridge for 3-4 hrs.Once its set, cut into desired shapes and have it :)

RAVA LADDU


Ingredients:
  • Rava - 1 1/2cup
  • Condensed Milk - 3tbsp
  • Ghee - 3tbsp
  • Sugar - 1/2 cup
  • Water - 1/2 cup
  • Coconut - 1/4 cup(grated)
  • Milk - 1/4 cup
  • Cardamom Powder - 1/2 tbsp
  • Cashew nut and raisins
  • Salt - 1 pinch
Preparation:
  • Take a pan and heat ghee in it.Roast cashew nuts and then roast raisins.Keep it aside.
  • In the same pan we will roast our rava.Roast till it become golden brown color.Keep it aside.
  • We will make the sugar syrup now.Ad sugar in the pan and water.Sugar should be melted.
  • In the sugar syrup add our cashew nut, rava, coconut, milk, condensed milk, cardamom powder, pinch of salt and mix everything.
  • When it is mixed properly switch off the flame.Let the mix get cooled.
  • Make laddu from the mix in desired shape and keep raisins on top of it.

Ingredients:
  • Kadala Parippu (Bengal dal) - 1 Cup
  • Maida(All Purpose Flour) - 1 Cup
  • Ghee - As required
  • Sesame Oil - 1/4 cup
  • Sugar - 3/4 cup
  • Turmeric Powder - 1 1/2 pinch
  • Salt - 1 pinch
  • Jadikai(Nutmeg) powder - 1/2 tsp
  • Cardamom Powder - 1/2 tsp
Preparation:
  • Wash the dal and cook in pressure cooker using  1 1/2 cup of water and cook for 1 whistle.
  • Wash and drain the cooked dal.
  • Take a kadai, heat it. Mix sugar and cooked dal.Keep in low flame.
  • Add the nutmeg and cardamom powder into it.Mix it properly.Cook till it becomes semi paste,such that we can make balls out of it.
  • Cool the mixture and make into small balls.
  • Take a bowl add maida, turmeric powder, salt,add water in small quantity to make it a soft dough.The dough should not be dry. Mix using hand and mix till it will stick to your hand.Add sesame oil into the dough and again mix it.It should become a soft dough and it should not stick to your hand. (should not become dry like chapathi dough, should have enough moisture)
  • Keep the dough for 1/2 an hr.
  • Make small balls of the dough, flatten it and keep the dal balls inside the maida ball and enclose it.
  • Dap the ball in rice flour.
  • Roll out the ball.And make it as thin as possible.Do not give pressure while rolling else the dal inside will come out.
  • Take a pan preheat it and place boli onto it.When one side become cooked, turn and cook the other side.Apply ghee on top of it.
  • Turn it again and when it is cooked, take it out from pan.Repeat the same for rest of the boli.

Ingredients:
  • Avocado - 2 Ripe
  • Milk - 1/2 cup
  • Honey - 1 tbsp
  • Milkmaid - 1 tbsp
  • Almond Crushed - 2 tbsp
Preparation:
  • Blend avocado,milk,milkmaid and honey in a blender.
  • Mix it with the crushed almonds.
  • Refrigerate for about an hour or two. Garnish it and have tasty pudding.

NEYYAPPAM


Ingredients:
  • Pachari (Raw Rice) - 3 cups
  • Rava - 2 tbsp
  • Banana (small banana) or robusta - 2 nos
  • Chopped coconut - 1/2 cup
  • Baking soda - 1/4 tsp
  • Jaggery - 1/2 kg
  • Sesame seeds - 1tsp
  • Salt - 1 pinch
  • Ghee - 3 tsp
  • Oil for frying
  • Cardomom - 2 nos (crushed)
  • Water - 2 cups
Preparartion:
  • Soak the rice for min 5hrs. 
  • After 5 hrs drain the rice and grind it in mixer.
  • Do not make the flour into fine powder.
  • Mash the bananas using a spoon.
  • Heat a pan, add water and jaggery and melt it.
  • When it is done drain the jaggery syrup using a strainer.
  • Heat a pan add 1 tsp of ghee and fry the chopped coconut until it becomes light brown color.
  • Take a bowl add rice flour, mashed banana, sesame seeds, salt, crushed cardomom, rava, fried coconut, ghee, baking soda and jaggery syrup and make a batter.
  • Keep this batter for 2 hrs.
  • Heat oil in a deep bottomed pan.When the oil is hot using a ladle pour the batter to the oil.
  • Deep fry both sides.

Ingredients:
  • Maida - 2 Cups
  • Salt - 1/4tsp
  • Sugar - 1 tsp
  • Water - As needed to knead the dough 
  • Sugar- 1/2 cup (for making sugar syrup)
  • Water - 1/4 cup (for making sugar syrup)
Preparation:
  • Take a bowl and add maida, salt, sugar and enough water for making into a smooth dough.
  • Mix the ingredients and make into a smooth dough.
  • Keep it aside for 15 mins.
  • Make small balls out from dough and roll out each one into thin round shape.(sprinkle flor around the balls so that it wont stick).
  • Cut into diamond shapes using a knife/pizza cutter.(First have vertical cuts and then cross slanted cuts so that it will become diamond shapes)
  • Heat oil in a pan and add the diamond cuts. Fry till it becomes light golden color.Repeat the same with the rest of the dough balls.
  • Take a kadai and add the sugar and water for making into sugar syrup.
  • Allow the sugar and water to boil.Keep in low flame and stir it.It should become thread like consistency.(when you pour the sugar syrup it will flow like one thread).
  • Let the syrup get cooled.
  • Mix the fried diamond cut along with the sugar syrup.
  • Once the cuts get cooled the sugar will get coated on it.

Ingredients:
  • Semiya - 200g
  • Milk - 6 cup
  • Condensed Milk - As per taste
  • Cardomom Powder - 1/2 tbsp
  • Sugar - As per taste
  • Ghee
  • Cashew Nut and Kismiss
Preparation:
  • Take a pan for roasting the semiya.Heat the pan.Add ghee and heat it.
  • Add semiya into it.Keep in medium flame and roast till it becomes golden brown.Remove semiya from the pan and keep it aside.
  • In the same pan add milk and 1 1/2 cup of water.
  • Boil the milk.When the milk get boiled add required sugar into it (add little now because we have to add condensed milk also).
  • Again heat the milk till the water we have added get evaporated (milk will become little thick and it will make paysam more tasty).
  • Now add cardomom powder and condensed milk into the milk.(If taste is still less you can add sugar/condensed milk).
  • Boil the milk again.When the milk get boiled add roasted semiya into it.Keep in high flame.
  • When the milk boils you can switch off the flame and cover it.
  • Take a small pan, add ghee and roast cashew and kismiss.Add the roasted cashew and kismiss along with pinch of salt into the paysam.

Ingredients
  • Boneless Chicken - 500 g
  • Pepper Powder - 1/2 tsp (for cooking chicken)
  • Ginger - 1 small piece crushed ( for cooking chicken)
  • Potato - 3 big (Cook the potato)
  • Onion - 1 big (Chopped)
  • Green Chilli - 2 -3 nos (Chopped)
  • Ginger - 1 big piece (Crushed)
  • Garam Masala - 1 1/2 tbsp
  • Egg - 2
  • Bread Crumbs
  • Curry Leaves
Preparaton:
  • First we have to cook the chicken.Take a bowl for cooking the chicken. Add chicken, pepper powder, Ginger, salt. Mix everything.
  • Add little water for chicken to cook.Cover it and cook the chicken till the water get absorbed and chicken is well cooked.We should get a dry cooked chicken so you should add only little water to cook the chicken.If you feel water is more even after the chicken is cooked just uncover and cook so that water will get evaporated.
  • Once the chicken is cooled we have to grind the cooked chicken.
  • Take a pan and add little oil. Add the grinded chicken into it and just fry it. So that cutlet will become more tasty and crispy.
  • Take a pan and add little oil.Add chopped onion, ginger and green chilli into it.Saute it and switch off the flame
  • Add chicken into it. Add garam masala. Smash the cooked potato and add into it.
  • Add curry leaves and mix the ingredients.Add salt if required.
  • Make into desired cutlet shape.
  • Beat the eggs. Dip the cutlet into the beaten egg and give a coating of bread crumbs.
  • Fry it in oil till it becomes brown color.Tasty chicken cutlet is ready.

BANANA BALL

Ingredients:
  • Banan (Ethakai) - 1 nos (Large) (take ripened banana)
  • Coconut - 1/2 coconut (grated)
  • Cashew Nut and Kismiss
  • Coconut - 1/2 coconut  (grated) (for giving coating)
  • All Purpose Flour/ Maida (for making batter)
  • Cardamom Powder - 1 tsp
  • Ghee - 1/2 tsp
Preparation:
  • Cook the banana by steaming it.
  • When its cool smash the cooked banana.Smash it such that there wont be any thick parts. (If the banana do not have enough taste you can add little sugar now.
  • Add grated coconut (2 handful), cardamom powder, cashew nut and dry grapes and mix it well with the smashed banana.
  • Add little ghee into it.(If required)
  • Make small balls of the banana mix.
  • Make a semi-thick batter of all purpose flour/ Maida.
  • Dip the banana ball into the batter to give the coating of the batter and then dip into the grated coconut to give a coating of coconut. And gently make into ball again so that the coated coconut will stick into the banana ball.
  • Take a kadai and heat oil in it.Fry the banana balls in the oil till it become golden brown.
